St. Simon’s Sweet Potatoes

Sweet potatoes are so healthy, and baking them using flavored olive oil increases their tastiness.

You’ll be blessing St. Simon and this delicious dish right down to the last potato.

Serves: 4

Ingredients

2 pounds sweet potatoes, peeled and cubed into 2-inch cubes

1 red onion, chopped

2 cloves garlic, minced

¼ cup Tuscan Herb Olive Oil

Salt and pepper to taste

Method

Preheat oven to 400°. In a large bowl, place potatoes, onions, garlic, Tuscan Herb Olive Oil, salt and pepper. Mix well, coating all ingredients with olive oil. Spread potatoes on a large baking dish. Roast for 1 hour 20 minutes, turning potatoes a couple of times so they roast evenly.

To Serve

Place on serving dish and serve immediately.

Variations

*  For a change, try a sweet Vidalia onion instead of the red onion.

*  Use Blood Orange Olive Oil for a sweet flavor or Rosemary Olive Oil for a flavor twist.  Add chopped, fresh mint before baking for additional color and taste.
